Ingredients
4 cod fillets
2 Tbs low-sodium soy sauce
2 Tbs sesame oil
2 cloves garlic, minced
2 tsp fresh ginger, grated
5 radishes, diced
2 green onions, thinly sliced
1/2 English cucumber, diced
1/2 jalapeño, diced (seeds and ribs removed)
2 Tbs cilantro, finely chopped
1 small lime, juice and zest
1 tsp honey
1/4 tsp salt
1/4 tsp black pepper
Directions
  1. Preheat oven to 425° F.
  2. Line a baking sheet with parchment paper.
  3. Spray with nonstick cooking spray.
  4. Add cod fillets.
  5. Stir together the soy sauce, sesame oil, garlic and ginger.
  6. Pour over the fish.
  7. Bake for 10 to 12 minutes until flaky, depending on thickness of fish.
  8. Make the salsa by combining the radishes, onions, cucumbers, jalapeños and cilantro in a bowl.
  9. Stir in the lime juice, lime zest, honey, salt and pepper.
  10. Serve the salsa on top of the fish.
